A smoked pork shank (hock) is a versatile cut of meat that can add lots of flavor to your meal. This cut has meat along with a marrow bone so it is a great way to start soups, stews and braises. We use it regularly to make soup beans like our grandma did.
The shank is best suited for low and slow cooking. It is a lean cut that will crumble apart if given the chance to go the distance.
